Smørrebrød and all that

Smørrebrød literally means buttered bread. This description hardly seems to do these tasty and attractive Danish open sandwiches justice. There are so many lovely combinations of flavours and textures for toppings to choose from.  



Sunday lunch smørrebrød
Roast beef, pickled cucumber, crispy onions & horseradish. Cheese, egg & tomato. Prawns, cos lettuce & remoulade

This is my version of smørrebrød using ingredients that were available in the fridge today. OK they may not be perfect or even very beautiful. So I apologise to any Danes who stumble on this blog. But I think these combinations are fairly traditional and they certainly tasted good. Danish open sandwiches are traditionally eaten in a particular order. Fish, meat then cheese, but hey ho! Why not be different?

Wouldn't it be brilliant to get these in the supermarkets along with sandwiches and sushi. When we have been in Denmark you could buy similar for about £3 or £4.
